It is difficult to put into words the dedication, passion & enthusiasm that exudes from Tom Flavin our Executive Chef a Failte Ireland Food Champion & his kitchen team. It is so difficult to find a head chef to work alongside in a large hotel who wants to deliver only the best quality of locally sourced food
and food experience.
Tom wants to offer guests a pure taste of the Wild Atlantic Way and works extra hard to get there by supporting local artisan producers along the way hence offering a dining destination that has the heartbeat of Limerick city. Our menus reflect a passion for high quality locally grown produce.
We are fortunate to be living right in the middle of the Wild Atlantic Way and in the heart of the Golden Vale with some of the best raw ingredients in the world & a great larder for our kitchen team. We partner with local farms & dairies wherever possible to source the finest fresh ingredients which allows
us to take pride in our unique menu.
We use real, fresh, high quality, locally sourced produced, seasonal food that is healthy for people and makes Ireland’s food industry the best
in the world. Soups, sauces, gravies & dressings are made fresh from our own recipes, most of which have no added Gluten.
We use only the finest, freshest Irish meats.
Over the past 10 years we have been lucky to develop our strong local food message and passion behind it on a national basis.
The food speaks for itself, an ethos of championing local producers where possible features through all our various menus.
Tom is a highly innovative individual constantly striving to educate our guests on the importance of local food produce and does so through his
inventive local food menus. Hence the birth of our "Taste the Place" Menu our menu celebrates food provenance and local suppliers.
